This is a party-sized premix that's loaded full of essence of the holiday season, rendering it perfect for your holiday party. Any leftover cordial for brunch beverages, desserts, or to make more rounds of bikinis.
Bikini Recipe
Serves 10 people
Ingredients for the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Cocktail (makes 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
To prepare the Citrus Syrup: Put every ingredients inside a pot, bring to a simmer, mixing to dissolve. Then, take off the heat and leave to cool fully. Transfer into an clean bottle, cap it keeping it in the refrigerator, where it will keep for about a month.
To make Batch Mix: Combine every liquids into a large bottle, allow it to infuse for one hour, then pass it through best through cheesecloth, making it perfectly clear.
When ready to serve: Measure 85ml of the batch mix into a cocktail shaker packed with ice, and stir carefully for a minute until cold. Filter to a frosted cocktail glass or a similar vessel, top with a few cranberries and finish by giving it a quick spritz with the mandarin essence above the glass.
